What is Sodium Iodate? It is an inorganic compound, with the chemical formula NaIO3, that is the sodium salt of iodic acid. It is a strong oxidising agent with various applications, including use as a dough conditioner in baking, a disinfectant, and in research involving retinal cells.

Frequent Uses

Food Industry
Sodium iodate is used to strengthen doughs, particularly in leavened products like bread. It does this by oxidising sulfhydryl groups in flour proteins, improving dough rheology.

Disinfectant and Antiseptic
Can be used as a disinfectant to eliminate bacteria and viruses, and as an antiseptic for mucous membranes. 

Retinal Research
It has been used in research to study retinal degeneration and the effects of oxidative stress on retinal pigment epithelium (RPE) cells. It can induce cell death in RPE cells, making it a useful tool for investigating potential therapies for retinal diseases.
